As you are learning from my recipe I Am Nuts About Coconuts, I am really loving coconuts these days. I continue to enjoy the fresh coconut water . It so delicious and refreshing. This is also a terrific choice on the go.
When I am creating recipes, I often need to have extra on hand because much of the fresh coconut meat is gone before I begin. You will always find coconut water, almond milk and shredded coconut on hand here in our home. How fabulous that it is so healthy too!
BENEFITS OF COCONUTS
Coconut is highly nutritious and rich in fiber, vitamins, and minerals
The coconut provides a nutritious source of meat, juice, milk, and oil
Improves insulin secretion and utilization of blood glucose
Prevents wrinkles, sagging skin, and age spots
Helps prevent obesity and overweight problems
Functions as a protective antioxidan
On a recent visit to The Raw Food Institute to visit my mentor, Lisa Wilson, I was fortunate enough to arrive in time for lunch. A wonderful raw food chef Steve Stewart and his wife Chris were preparing the menu. As luck would have it, Steve had an amazing Coconut Thai Soup.
On April 21st, Nevin and I celebrated our 21st wedding anniversary and I wanted to make a special celebration dinner.
We began with Steve’s Coconut Thai Soup.
In preparation for this post, I searched for some variations to share but they all had either chicken and/or sugar. My personal health journey has taught me that sugar is a no – no so I am offering this for your enjoyment. Now with the warm weather approaching, I know this will be a regular at our table. Each meal is its own celebration.
COCONUT THAI SOUP
Coconut water and meat from one young coconut
Note: if you do not have a fresh coconut use coconut water and shredded coconut.
- Coconut water and meat from one young coconut
- (Note: if you do not have a fresh coconut, use coconut water & shredded coconut)
- 2T Braggs or coconut aminos
- 2T olive oil
- 2T lime
- 1 garlic clove (Steve loves his garlic but this is way too much for me. A snip is more than enough to begin with. Work to find your own proportions. )
- 1T curry
- 1T turmeric
- Place all ingredients into food processor and mix.
When I served this wonderful dish, I topped it off with some fresh dill.
Other toppings can include
Sprouts (I never pass up an opportunity to add sprouts)
