I love eating a mostly raw diet and I love eating ice cream!

When talking about health, I often engage in conversations with people who don’t want to give up food that they love, such as breads, pastas, and especially desserts like ice cream. Of course I like a good frozen treat just as much as anybody. Today I  appreciate what live, nutrient-rich foods do to keep a body energized and disease free.

Throughout my years nurturing my body with a raw food diet, I found that it’s incredibly easy to indulge in healthy sweet goodies. In fact, it’s necessary to allow ourselves to experience all of the sensations of the taste buds. Often, eating celebratory foods like cakes and ice creams are a vital way to take care of our bodies emotionally.

Raw ice creams incorporate all of the traditional flavors that their dairy counterparts use, like vanilla, strawberry, peach, and banana.

The creamy base of raw ice creams usually come from coconut milk, or raw almond milk. Decadent mix-ins like organic fruits, raw nuts, cinnamon, green tea, and even rich vegetables like pumpkin turn raw ice creams into culinary masterpieces. Try swapping healthier alternatives for conventional additives, such as raw cacao for chocolate and raw almond butter for peanut butter. Flavor raw ice creams with cold pressed decaf espresso instead of caffeine-laden coffee, and color these yummy delights with antioxidant-rich green tea instead of food dye.

Here are some wonderful raw fixings to add to any ice cream recipe…
  • Coconut butter
  • Cashews, walnuts, pecans, or Brazil nuts
  • Cacao nibs
  • Vanilla beans
  • Mangos, peaches or other favorite fruits
  • Organic cherries
  • Goji berries
  • Shredded coconut
  • Lucuma powder
  • Maca
  • Mint

When making any of these raw ice cream recipes, start with a foundation of raw coconut milk or almond milk, and sweeten with dates, raw coconut sugar, or agave.

Blend all ingredients in a Vitamix  or other high speed blenders, and then freeze according to directions on an ice cream maker. It’s also easy to put blended ice-cream base in a glass container in the freezer.

Elaine’s Tasty Tip:

When you take the ice cream from the freezer it helps consistency to blend again for a few seconds. You may need some extra liquid.

 Note: Remember to always watch your sugar intake and allow for special treats. On days I would eat this, you will usually find me enjoying  extra green juice and alkaline water. 

 

Coconut Cacao Ice Cream

Ingredients
  • 1 cup raw coconut milk
  • 6 dates
  • 1 tablespoon cacao
  • 1 tablespoon raw coconut butter
  • (A touch of cinnamon, if desired)
Instructions
  1. Start with a foundation of raw coconut milk or almond milk, and sweeten with dates, raw coconut sugar, or agave.
  2. Blend all ingredients in a high-speed blender
  3. Freeze according to directions on an ice cream maker. It’s also easy to put blended ice-cream base in a glass container in the freezer.

 

 

Raw Peach Ice Cream
