How wonderful to be able to enjoy healthy raw desserts and treats while creating and renewing radiant health. Avocado, cacao, cinnamon,vanilla….all things I adore.

Beating Stage IV cancer was a gift to me as it led me to educate myself on the foundations of true health.

This put me in total control and it feels empowering. True freedom.

Cacao is a type of tropical tree, part of the evergreen family that produces the world’s chocolate in raw form, before fat, sugar, and other “sweeteners” are added. Cacao is not added to dark chocolate; it actually is chocolate!

Cacao is packed with vitamins and antioxidants that make it almost a super food or natural Multi-Vitamin! The beneficial ingredients found in the Cacao nibs (raw chocolate) are antioxidants, essential minerals and vitamins.

 

 

avocadoAvocado is wonderful food to work into your daily diet.  It gets a lot of bad press because of its high fat content, but what most people don’t realize is that these are ‘good’ fats, which won’t really make you gain weight.  Think of it like ‘good’ and ‘bad’ cholesterol; same principle.  Avocado makes the list because not only is it super-high in alkaline content and antiox, but it also has more oleic acid than probably any other food.  This compound promotes your metabolism, helps fight bad cholesterol, and reduces the risk of heart disease.

Raw Chocolate Mousse
Ingredients
  • 1 ripe avocado
  • 1/2 cup cacao powder
  • 1 Tbs. vanilla
  • 1 Tbs cinnamon
  • Small handful of fresh mint
  • Almond milk or coconut water to make smooth and creamy
Instructions
  1. Place all ingredients in blender and adjust the texture using almond milk or coconut water.
Notes
 Because I really stay away from sweeteners, vanilla, cinnamon and mint are what I use – Layering this is a parfait glass wonderful way to serve. 1st way, coconut, fruit of choice, mousse then top with coconut flakes, fruit and cinnamon. This wonderful recipe is fabulous as a pie or cake filling too.
