Hi, Elaine Gibson here, Renewed Living! Nevin and I are out on Skyline Drive for a gorgeous Sunday afternoon and we’ve just stopped at a seating area to eat some lunch and I wanted to share with you how easy it is to be healthy, no matter where you go! Once you decide, the rest is easy; it’s just a matter of choices on what you’re going to bring. So, here is what we have!
We have some kale chips that I always have handy. We’ve already had some snacks as we were walking. We have some hard boiled eggs that are from the farm. I got them a couple of days ago from Polly Face Farm, which we LOVE. I even carry a small traveling to-go pink Himalayan salt, and here I have, one for each of us, some collard greens that I use as a wrap. This one has simply avocado and sprouts wrapped in the collard and then this one, I actually stuck some – I think the flies like it, too – some almond butter as well….some raw, unsalted, crunchy almond butter, which is awesome. I have some mushroom tea with me. Even though it’s a beautiful, warm day, I LOVE my warm tea; it’s just so comforting and wonderful. And, yes, I’ve already had my juice and I will have more on the trail.
So, I wanted to share with you that you could be healthy no matter where you go! It’s just a state of mind. Make the effort, because you are worth it! Have a healthy and grateful day! To your health!
- Collard Greens
- Almond Butter
- Remove peel and pit from avocado.
- Place avocado (sliced or diced), sprouts and almond butter in a collard greens leaf.
- Roll tightly.
- 2 heads curly kale
- Olive oil
- Sprinkle of Himalayan pink crystal salt
- Wash and cut kale into bite sizes pieces. (In a pinch Trader Joe’s has wonderful packages kale in bite size pieces). Coat the kale with olive oil and rosemary.
- Dehydrate using dehydrator sheets on 100 degrees for about 12 hours.
We just finished our walk down to the falls at Skyline Drive. And the walk down was really easy. The walk up, of course, was a little tougher, but I wanted you to know that I brought some juice for the afternoon; I just made some extra when I made my green juice this morning. I’ve got cucumber, celery, parsley, spinach, some beets, lemon, ginger and garlic. And I NEVER miss my afternoon juice – I am SO happy to have it with me today! Have an awesome day!
Keep juicing and being healthy!

- Wash all produce in alkaline or spring water.
- Put through juicer and enjoy.
