Hello, Elaine Gibson from Renewed Living! I am SO excited to share this with you! Let’s call it a Corn Avocado and Lime Salsa. It began as a salsa, because I was making some raw tacos and I fell in love with it so much, I will let you in on a little secret: I’m eating it almost every day!

Let’s get started! It’s easy, fabulous, amazing and… a little addictive.

I have one avocado, cut up, this is how you start. Here we go! Then I have got a fresh, raw corn on the cob. Now, I have washed the corn in alkaline water, so I’m just going to mix that in there. Still easy! Now, I have a lime and I’m using my Chef’n Citrus squeezer, which is my favorite. You just get it from Amazon; it’s on the website. If you haven’t tried it yet and you do a lot of citrus, you will love it, just as I do. Then I have some chives; these are actually from my garden and, yes, these have been washed with alkaline water also. And I just snip them to add in… and I mix it all up and, believe it or not, that’s the whole thing! It is SO good. I know you probably can’t smell it through the camera, but it smells so fresh and clean and wonderful!

 

Corn Avocado Lime Salsa

Ingredients
  • Fresh corn from the cob
  • 1 Lime
  • 1 Avocado
  • Chives
  • Optional Toppings: Sprouts, Sunflower seeds, Rosemary, Basil
Instructions
  1. Cut avocado into bite sized pieces
  2. Add corn to chopped avocado
  3. Add juice from the lime
  4. Cut up chives
  5. Mix and enjoy

Now, let me show you some of the options that I go to use.

As I said, I literally use this almost every day as a salad. I have sprouts that I have done… I can add them in there. I have some other herbs that actually are from my garden, some rosemary and some basil; whatever your tastes are, you can just snip them and add them in there.

Now, I also have some sunflower seeds that I have soaked and dehydrated, which is actually what I did last night; I just added some of these in and made it a little crunchier. Now, here is some salad – yes – this is from my garden as well and, yes, it is washed in alkaline water.

Corn salsa plated 2Now, you can either take it and really plate it nicely and put it on the piece of lettuce so it’s really lovely looking like that, and put it on the plate. I did this – I added sprouts on top of it and some fresh tomatoes from the farmer’s market surrounding the plate. Or, you can do what I really like to do….and just wrap it… and enjoy!

However you choose to do it, just be sure that you go ahead – take the plunge! It’s easy, simple and delicious.
