Elaine Gibson, coming to you from Renewed Living in our kitchen sitting room. I want to share with you a variation on a theme that I saw today at Cheesecake Factory. I was having lunch with a friend and she ordered lettuce wraps, and they substituted portobello mushrooms instead of chicken. So, I thought, oh my goodness, I cannot wait to get home and make this for Nevin for dinner.
So, what I did was just, kind of, put my own variation together:
- Beansprouts
- Shredded carrots
- Shredded purple cabbage
- Roasted red peppers
- Vinegar coleslaw
- Sauteed portobello mushrooms cut up
- Romaine lettuce to use for the wrap
Now, they used a bib lettuce which was beautiful, but when I was at the store, they didn’t have any. And I thought, you know, this is all easy do, and integrate, and put stuff in and out. So, all we’re going to do is take a piece of romaine lettuce, put some roast peppers on it. Put some marinated cabbage and coleslaw, and we’ll put some shredded cabbage on it, some shredded carrots, always sprouts, and some sauteed portobello mushrooms.
And this is an Asian dressing, you could use any dressings that you want. Again, I’m not a very spicy eater, and they served it with some spicier choices for dressings. They had some marinated cucumbers; they had lots of things on there.
But, I really could not wait to get home and try this. So, this is my variation tonight.
