Almonds are a super food that offer many benefits;

  • Good for brain development
  • Regulates cholesterol
  • Mono-saturated fat, protein and potassium contained in almonds are good for the heart
  • Used in Skin care
  • Regulates blood pressure
  • Protection against diabetes: Almonds also help in reducing the rise in sugar and insulin levels after meals

Because I include very little dairy in my diet, I have learned how to make fresh Almond Milk.

Not bad for a city girl!

Proportions I use are 1 cup almonds to 2 cups water. Adjust for desired amount of milk.

Step 1:

Soak your almonds overnight for 6 hours or night in a jar or bowl.  Discard water.

Step 2:

Place 1 cup soaked almonds plus 2 cups of water (preferably alkaline) in Vitamix link, blender or even Magic Bullet. Blend until smooth.

Step 3:

Pour mixture through a strainer or nut bag.

Step 4:

Store in refrigerator.

Step 5:

Enjoy!! Use it in your cereal, tea, coffee, soups, hot cocoa, puddings, ice cream and anything you can think of.

Variations:

Once you begin making your own almond milk you will find your favorite adaptations to this very basic formula including adding dates, cinnamon, vanilla, shredded coconut, and cacao powder or pieces. This milk be used hot or cold.

Wait! Don’t toss the almond meal….

Save and store the almond meal for smoothies, a base for cookies and deserts.
Last week I used this along with chopped walnuts and seasonings to coat fish I was baking. Once it was baked I squeezed a little lemon juice on top. Nevin loved this.
